WHAT IS PAKORA ?

Pakora are fried snack originating from the India. Pakora are a delicious crisp fried snack made with gram flour, spices & any main ingredient like onion, mix vegetables, layered with a spiced batter and golden fried. They are so popular and served in restaurants and sold by street vendors.

INGREDIENTS

Cauliflower sliced 20 grams
Egg plant sliced 15 grams
Mushroom sliced 15 grams
Potato round sliced 20 grams
Red onion 15 grams
Green capsicum 15 grams
Red capsicum 15 grams
Cabbage 15 grams
Whole dried red chill 2 grams 
Finely chopped garlic 2 grams
Finely chopped ginger 2 grams
Chick peas flour 40 grams
Rice flour 10 grams
Whole coriander seeds 2 grams
Whole cumin seeds  2 grams
Turmeric powder 2 grams
Coriander powder 1 grams 
Red chili powder 1 grams 
Chat masala 1 grams 
Salt 1 grams 
Water 20 ml

EQUIPMENTS

Frying wok
Slotted spoon
Medium sized bowl

METHOD OF COOKING 
Step 1

In a bowl, mix together all the Vegetables sliced. Now add the finely chopped garlic and ginger and all the masala (spices) following the flours. Now gradually add the water, a little bit a time, until a thick batter has formed. The vegetables will release water so we don’t want to add too much water. The batter must be thick so that it evenly coats all the vegetables. If the batter is too thin, it won’t stick to the vegetables. Once the pakora batter is ready, set it aside.

Step 2

Frying the Mixed Vegetable Pakora. In a medium sized wok, bring oil to a medium high heat or to 180C. To see if the oil is ready for frying, drop a little bit of batter into the oil. If it floats up immediately, the oil is too hot for frying. If the batter takes about 2 seconds to float up, then the oil is ready for frying.

Step 3

Using a tablespoon ( the safe side) drop the vegetables batter into the oil. Frying only a few pakoras at a time. Too many pakoras will crowd the wok, and cause the temperature of the oil to drop and the pakoras won’t cook evenly. Flip the pakoras while frying so they evenly cook from all sides. Using a slotted spoon, remove the pakoras from the wok and place on a paper towel lined plate. Those beautiful snacks should be eaten right away so they don’t get soggy, similar to any fried food. Serve with green chutney.
